Ingredients
- 1 lb ground beef
- 2 cups sweet corn frozen or large can
- 1/4 cup black olives sliced
- 14 1/2 oz diced tomoatoes can
- 1 1/4 cup Bisquick Biscuit mix
- 1 Tbs chili powder
- 2 Tsp cumin ground
- 1/2 cup cornmeal
- 1/2 cup milk
- 2 Tsp green chillies chopped
- 1 egg
Instructions
- Pre-heat oven to 400°.Heat large skillet over medium heat.
- Add 2 T. cooking oil and then brown the ground beef.
- When almost brown, add the sweet corn, the canned tomatoes, sliced olives, chili powder, ¼ cup of biscuit mix, cumin and salt. Bring to a boil.
- Cook for one minute then turn off heat.Transfer to a nine-by-nine inch or similar size baking pan.
- Stir together the cup of biscuit mix, egg, cornmeal, milk and chopped green chile. Mix until blended, then pour over the meat mixture.
- Bake uncovered at 400°for 20-30 minutes, removing when the top crust has browned.
- Remove from the oven, cut and serve.
