Instructions
Pre-heat oven to 400°.Heat large skillet over medium heat.
Add 2 T. cooking oil and then brown the ground beef.
When almost brown, add the sweet corn, the canned tomatoes, sliced olives, chili powder, ¼ cup of biscuit mix, cumin and salt. Bring to a boil.
Cook for one minute then turn off heat.Transfer to a nine-by-nine inch or similar size baking pan.
Stir together the cup of biscuit mix, egg, cornmeal, milk and chopped green chile. Mix until blended, then pour over the meat mixture.
Bake uncovered at 400°for 20-30 minutes, removing when the top crust has browned.
Remove from the oven, cut and serve.
