Thai Chicken and Lettuce Rolls
A quick, cool, no-cook summer meal
Ingredients
- 1/2 cup fresh lime juice
- 1/4 cup Asian fish sauce
- 2 large cloves garlic, minced
- 2 tsp Thai or serrano chiles, minced, or 1 tsp dried hot red pepper flakes
- 1/4 cup sugar
- 16 thin slices deli chicken or roast beef
- 16 large lettuce leaves
- 2 carrots cut into matchsticks
- chopped cilantro and mint
Instructions
- Whisk together first 5 ingredients until sugar is dissolved. Toss in a bowl with meat slices. Fill each lettuce leaf with meat, herbs, and carrots, drizzle with sauce, and roll up to serve.
