Thai Chicken and Lettuce Rolls

A quick, cool, no-cook summer meal

Ingredients
  

  • 1/2 cup fresh lime juice
  • 1/4 cup Asian fish sauce
  • 2 large cloves garlic, minced
  • 2 tsp Thai or serrano chiles, minced, or 1 tsp dried hot red pepper flakes
  • 1/4 cup sugar
  • 16 thin slices deli chicken or roast beef
  • 16 large lettuce leaves
  • 2 carrots cut into matchsticks
  • chopped cilantro and mint

Instructions
 

  • Whisk together first 5 ingredients until sugar is dissolved. Toss in a bowl with meat slices. Fill each lettuce leaf with meat, herbs, and carrots, drizzle with sauce, and roll up to serve.
