Uncle John's Beer and Potato Salad

Ingredients
- 2 1/2 pounds potatoes, unpeeled
- 1/2 cup finely chopped yellow onion
- 1/2 pound yellow beans, cooked
- 4 tbsp olive oil
- 1/2 cup finely-chopped onion
- 3/4 cup lager beer
- 3 tbsp vinegar (malt or cider)
- 1 tbsp Dijon mustard
- 1/2 tsp sugar
- salt and pepper to taste
- 2 tbsp chopped chives
Instructions
- Cook potatoes in boiling, salted until a knife can be easily inserted (about 20-25 minutes). Remove, cool and clice into 1/2-inch rounds.
- In glass or ceramic bowl, mix potatoes with the yelloww onion and beans.
- In a medium saucepan, over mdium heat, add 2 tsp olive oil, 1/2 cup chopped onion and cook until soft, approximately 15 minutes. Add lager, vinegar, mustard and sugar and boil for 5 minutes. Pour mixture into blender with motor running and add 4 tablespoons olive oil. Taste and adjust salt and pepper.
- Pour dressing over potatoes in a bowl and gently mix. Increase salt and pepper as needed.
- Garnish with chives and serve warm or at room temperature.
