Simplest Fish Chowder

You can cook the onions in olive oil and butter if you prefer not to use bacon or don't have any on hand.

Ingredients
  

  • 3 medium potatoes, cut into 1/4-inch slices
  • 1/2 cup diced celery
  • 1 1/2 lbs whitefish fillets
  • 1 cup cold water
  • 3 slices bacon
  • 2 medium onions, sliced
  • 1 cup boiling water
  • 2 1/2 cups milk
  • 2 tbsp butter
  • Salt and pepper, pinch of cayenne pepper, chopped parsley to taste

Instructions
 

  • Combine potatoes and celery. Cover with cold water and set aside. Cover fish with 1 cup cold water and heat to simmer for 5 minutes. Strain, reserving liquid. Cut fish in 2-inch pieces. Cut bacon into small pieces and fry in saucepan until crisp. Remove bacon, cook onion slices in bacon fat for 5 minutes. Drain potatoes and celery and add onion slices. Cover with boiling water. Simmer gently until potatoes are tender. Add fish and reserved fish liquid. Cover and simmer for 10 minutes. Add milk, salt, pepper, butter, and bacon. Garnish with chopped parsley and serve hot with oyster crackers.
