Quick Baked Haddock

Easy, quick main course using haddock, cod or other firm whitefish.

Ingredients
  

  • 1 pound haddock, cod or other firm whitefish fillets.
  • 1 clove garlic, chopped
  • 1 tbsp grated lemon peel
  • 1 cup panko
  • 2 tbsp butter, cut into small pieces

Instructions
 

  • Preheat oven to 425 degrees. Grease 9 by 13 ovenproof pan with shortening or Pam.
  • Pat fish dry with paper towels and season with salt and pepper.
  • Place garlic, panko and lemon peel in food processor and chop until thoroughly mixed.
  • Place fish in pan. Cover with panko mix and dot with butter. Bake fish in oven for 15 minutes. Remove and serve.
