Amy's Hotdish
Sen. Amy Klobuchar's Taconite Tater Tot Hotdish recipe.
Ingredients
- 1-1 1/2 pounds ground beef
- 1 can condensed cream of mushroom soup
- 1 can condensed cream of chicken soup
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 red pepper, chopped
- 1 1/2 cups pepper jack cheese, shredded
- 16 ounce package of frozen Tater Tots
- salt and pepper (or other herbs or spices) to taste
Instructions
- Preheat oven to 450 degrees
- Brown the ground beef, then drain off the fat. Add the onions, garlic, and red pepper and sauté until the onion is soft.
- Spread in a layer in a 9 by 13 baking dish. Cover with half the shredded cheese, then place the Tater Tots on top in one layer over the entire pan.
- Bake at 450 for 30 minutes or until the Tater Tots are crisp. Remove from the oven and cover with the remaining cheese. Return to the oven and bake until the cheese is melted. Serve hot.
