Rick's Family Plaid Hash

This Plaid Hash Recipe from Rick Howland is based on the New England Red Flannel Hash but is also known as MacGyver Meals by his kids.

Ingredients
  

  • 2 cups leftover cooked roast beef, corned beef, pork, or venison (whatever you have), cut into bite-sized cubes.
  • 3-5 large cooked beets or one can of beets cubed (1 1/2-2 Cups) (They give the hash the "plaid" look.)
  • 2-2 1/2 Cups boiled potatoes, cubed
  • 1 large onion, chopped
  • 1-2 tbsp butter (Mild oil works, as well) (bacon fat is even better)
  • small amounts chopped celery, carrots, or sweet pepper (If desired for additional flavor
  • salt, pepper to taste (garlic powder optional) (Worcestershire Sauce can also be added, but not by Grandpa's Maine standards)

Instructions
 

  • In a well-seasoned, used pan (preferably Grandpa's), melt butter over medium-high heat.
  • Add onion and cook until transparent. (If adding other raw vegetables such as celery, carrots, etc., add them at same time as onion.)
  • Add remaining ingredients, mix, and continue cooking until crisp. Season with salt, pepper, and other seasonings, as desired. (Do not overcook.)
  • If desired, serve with cooked eggs (fried preferred, but poached is OK.)
