Onions Casey
Classic sherried onions recipe by Billie Simmons Stites named in honor of her son's mentor Donald D. "Casey" Jones.
Ingredients
- 4 cups pearl or white boiling onions
- 3 tbsp butter
- 1/2 tbsp sugar
- 2 tbsp dry sherry
Instructions
- In a sauce pan, boil water, then plunge the onions in the hot water for about five minutes. Drain and rinse in cold water.
- When cool, cut the root ends and slip the peels off.
- In a large skillet, melt the butter, then place the onions in the butter, shaking the pan to saute the onions until they are a light golden color.
- Sprinkle the sugar over the onions, add the sherry and continue shaking the pan until the sherry is cooked away and the onions are nicely glazed. Serve.
