Farmboy's Barbecue Sauce

Great to use as a mop or a sauce with pork or beef.

Ingredients
  

  • 1 sweet onion, chopped
  • 2 cloves garlic, chopped
  • 1 jalapeno, seeded and chopped
  • 1 cup Coke or Dr. Pepper
  • 1 8 oz. can tomato sauce
  • 1/4 cup red wine vinegar
  • 1 tbsp chili powder
  • 3 tbsp molasses
  • 2 tbsp Worcestershire sauce
  • 3 chopped chipotles and 2 tbsp adobo sauce
  • 1 tbsp Dijon mustard
  • Juice of one lemon
  • 1 tsp Thai fish sauce
  • 1/4 cup bourbon

Instructions
 

  • Heat 1-2 tbsp of oil in a medium saucepan over medium heat until shimmering. Add the chopped onion, garlic, and jalapeno and braise until the onion becomes translucent. Add the tomato sauce, cola, ketchup, and vinegar and continue to cook for another 3-4 minutes.
  • Add the molasses, mustard, Worcestershire sauce, chipotle with adobo, fish sauce, chili powder, lemon juice, and fish sauce. Add a teaspoon of salt and a few grinds of fresh pepper. Continue to simmer for 10-15 minutes. Remove from heat and taste. Adjust for sweet/sour, fruity/smoky, spicy/mellow.
  • Sauce can be stored in the refrigerator for 2 to 3 weeks. When barbecuing meat, brush the cuts with sauce for the last 10-20 minutes of cooking so that the sauce adheres to the meat. Serve extra on the table for cue fiends.
