Green Beans with Red Onion and Feta Cheese

A quick side dish or main-meal salad
Prep Time 5 minutes

Ingredients
  

  • 1 lb green beans
  • 1/2 red onion or shallot, thinly sliced
  • 1/2 cup feta cheese
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp red-wine vinegar

Instructions
 

  • Steam the bean in a steamer over boiling water for 4 to 6 minutes, or a little longer for thicker beans (or cook them in boiling water if you don't have a steamer). Cool the beans to room temperature and toss with onion, feta cheese, oil & vinegar, and season with salt & pepper. All ingredients are to taste. Serve at room temperature or chilled.
    For a main dish, add extra feta cheese and serve with crusty bread and butter.
