Garam Masala

Ingredients
  

  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp whole cloves
  • 1/2 tsp black peppercorns
  • 1/2 tsp cardamom seed pods
  • 3 cinnamon sticks (about 3 inches long)
  • 3 bay leaves

Instructions
 

  • Preheat a small skillet over medium-high heat. Add all spices and the bay leaves, stirring or shaking the skillet for about 1 or 2 minutes or until fragrant. (The coriander and cumin seeds should turn reddish brown. and the bay leaves should be dried and brittle.)
  • Transfer mixture to bowl to cool. Once cool to the touch, grind it into small pieces the size of ground pepper. (A mortar and pestle works best for this. If you have a spice grinder or even an old coffee grinder, that works, too.)
  • Place in a clean jar or other tightly-sealed container. Store for up to two months.
