Roast Chicken with Apples and Grapes

Ingredients
  

  • 5 apples (Golden Delicious or Granny Smith)
  • 1 lemon
  • 2 pounds seedless white grapes
  • 3 1/2 pound chicken
  • 3 tbsp olive oil
  • 1/4 cup butter

Instructions
 

  • Pre-heat oven to 375 degrees.
  • Juice the lemon. Peel and core the apples. Cut one in half or quarters to fit easily inside the chicken cavity. Cut the remainder into 8 slices each. Put the slices into a bowl of cold water. with half the lemon juice.
  • Put half the grapes into a food processor and chop. Pour the mush into a fine strainer held over a bowl. Use a wooden spoon to press out the remainder of the juice from the pulp.
  • Stuff the chicken with the halved or quartered apple and put it into a baking dish. Sprinkle with salt and pepper and rub with 1 tablespoon of the oil. Turn the bird breast-side down and pour about 1/2 cup of the grape juice over it.
  • Place chicken in the oven for 45 minutes. After 45 minutes, turn the chicken over, pour the remaining grape juice over it, and return it to the oven. Roast for another 30 minutes or until the chicken skin is brown and caramelized and the juices run clear.
  • While the chicken is roasting, heat the butter with the remaining 2 tablespoons oil in a large skillet. Add the drained apple slices and the remaining grapes and saute over medium heat, turning the fruit once, until the grapes are soft and golden and the apples are tender and caramelized. This should take about 20 minutes. Transfer to a baking dish and reheat in the oven when you are ready to serve.
  • Let the chicken rest for five to 10 minutes, then slice. Serve with the apples and grapes.
