Slow Cooker Southwest Chicken Sandwiches
An easy dinner of spicy sandwiches
Equipment
- Slow cooker or Crock-Pot
Ingredients
- 1 pound skinless, boneless chicken breasts or boneless thighs
- 1 sweet onion, sliced thin
- 18 ounce bottle of your favorite barbecue sauce or salsa
- 8 ounces chili sauce
- 8 ounces root beer
- 4 bulky rolls
Instructions
- Place sliced onion on the bottom of the slow cooker.
- Place chicken on top of the onions, spreading out in a single layer.
- Mix remaining ingredients and pour over chicken.
- Cover pot and set on high for 3 hours. When done, remove chicken and shred or chop into bite-size pieces.
- Return chicken to pot and mix. Serve on rolls.
