Slow Cooker Southwest Chicken Sandwiches

An easy dinner of spicy sandwiches

  • Slow cooker or Crock-Pot

Ingredients
  

  • 1 pound skinless, boneless chicken breasts or boneless thighs
  • 1 sweet onion, sliced thin
  • 18 ounce bottle of your favorite barbecue sauce or salsa
  • 8 ounces chili sauce
  • 8 ounces root beer
  • 4 bulky rolls

Instructions
 

  • Place sliced onion on the bottom of the slow cooker.
  • Place chicken on top of the onions, spreading out in a single layer.
  • Mix remaining ingredients and pour over chicken.
  • Cover pot and set on high for 3 hours. When done, remove chicken and shred or chop into bite-size pieces.
  • Return chicken to pot and mix. Serve on rolls.
