Belle's Broken Glass Pie

This recipe found in the Creston (Illinois) United Methodist Church cookbook is from my grandmother Isabelle Kettleson and has to date back to the late 1960s.

Ingredients
  

  • 1 pkg orange Jello
  • 1 pkg strawberry Jello
  • 1 pkg lime Jello
  • 1 pint whipped cream
  • 1/2 cup pineapple juice
  • 1/2 cup sugar
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • pre-made baked single crust pie crust or make graham cracker crust for 9-in pie.

Instructions
 

  • Dissolve each package of Jello in separate bowls with 1 1/2 cups hot water. When set, cut in small pieces.
  • Dissolve envelope of unflavored gelatin in 1/4 cup of cold water, then add 1/2 cup pineapple juice. Cool until syrupy. Combine with whipped cream and fold in Jello pieces.
  • Pour Jello combination into pie crust or graham cracker crust and place in refrigerator to set. Slice and serve.
