Pork Sandwich with Red Cabbage and Horseradish

Ingredients
  

  • 4 slices sourdough or other bread
  • 1 handful of crisp salad greens
  • 4 - 6 slices cold roast pork

For the Red Cabbage

  • 1/2 cup apple cider vinegar
  • 1/3 cup granulated sugar
  • 7 oz red cabbage

For the Horseradish Cream

  • 7 oz Greek yogurt
  • 1/2 tsp sugar
  • 1 tbsp lime juice
  • 3/4 oz horseradish
  • salt and pepper, to taste

Instructions
 

  • To prepare the red cabbage, start by whisking the vinegar and sugar together in a bowl until the sugar is dissolved, then thinly slice the red cabbage and add it to the bowl. Let is sit while you make the rest.
  • Make the horseradish cream. Place the yogurt in a bowl, then mix in the sugar and lime juice and season with some salt and pepper.
  • Spread the horseradish cream onto 2 slices of the bread. Add some salad greens and place generous pork slices on top. Drain the red cabbage, season with salt and pepper, and place on the pork. Top with the remaining bread slices and serve right away.
