Mediterranean Style Haddock
Easy and fast one-dish meal. Great when served over rice to absorb the sauce.

- 1 pound haddock, cod or other firm whitefish fillet
- 2 tbsp olive oil
- 1 sweet onion, chopped
- 1-2 cloves garlic, chopped
- 15 oz can chopped tomatoes
- 1 sweet red pepper, chopped
- 1 tsp oregano
- 1/4 cup chopped olives
- 1/4 cup chopped pickled jalapenos (optional)
Heat a large frying pan to medium-hot and add the oil. Cook the chopped pepper onion until the vegetables soften, about 5 minutes.
Add the garlic, tomatoes and continue cooking, stirring occasionally, for 5 minutes. Add the olives, oregano and, if desired, the jalapenos and stir.
Place the fish fillets on top of the mixture, cover and simmer for 10-12 minutes or until fish is cooked.
Serve over rice.
