In a saucepan, mix honey, soy sauce and garlic. Place on medium heat on the stove an bring to a boil, then simmer for 5 minutes, stiffing often. Remove from heat and season with salt and pepper.
Dry pork chops with a paper towel, the season with salt and pepper.
When grill is ready, place pork chops on the grill and sear each side, turning frequently. Move chops to side (indirect heat) and continue to cook until cooked through (internal temperature of 145 degrees). Brush chops with the honey glaze and continue to grill, turning frequently and adding remainder of glaze to each side. When glaze is beginning to char, remove from heat and serve.
